About this book

Nour Abu Faraj studies Syrian cuisine as intangible cultural heritage and asks how its social meanings and everyday functions changed after 2011. Using the southern Syrian dish mansaf as a case study, she traces preparation rituals, hospitality, gendered labour and the effects of economic hardship, war and migration. The research shows how dishes travel and acquire new identities in exile, while traditions celebrated in cookbooks may become unaffordable in the kitchens from which they originated.
